A microcredential in Community Nutrition and Food Literacy is the second of two stackable microcredentials designed to prepare learners to address food insecurity, chronic disease prevention, and sustainability through community-based nutrition education and engagement. This microcredential prepares learners to design, facilitate, and evaluate food-based education and outreach initiatives that promote healthier, more equitable food choices in diverse community settings.
Through hands-on learning in applied nutrition, health education, and a culminating community-based partnership experience, learners will develop skills in facilitating workshops, supporting behavior change, engaging diverse populations, and implementing inclusive, evidence-informed, and culturally responsive nutrition initiatives. Learners will apply these skills in collaboration with community partners and organizations working to improve food access, nutrition education, and community wellness.
This micro-credential provides interdisciplinary, workforce-relevant knowledge and skills applicable to careers such as dietetic technician, nutrition assistant, community health worker, wellness coordinator, hospitality professional, food service supervisor, case manager, behavioral health support staff, community outreach coordinator, and nonprofit or public health program staff. Learners must complete the Introduction to Food Literacy microcredential prior to enrolling in this microcredential. Non-Buffalo State learners should contact the department regarding prerequisite requirements and eligibility.
Course Requirements
- NFS 315 Life Cycle and Community Nutrition
Prerequisites: NFS 102. A study of the physiological changes during pregnancy, lactation, and older adult aging; growth and development during infancy, preschool, school age and adolescence; the food and nutrition needs, specific nutritional concerns and nutritional services and nutritional programs available. - SWK 301 Poverty and Economic Justice
Focus on social welfare policies and programs. Overview of historical treatment of poverty and the poor, theories of poverty causation and the demographics of those impacted by poverty including race, age, gender, immigration status, socioeconomic status. Social change strategies and advocacy. Requires 20 hours of volunteer work in addition to coursework. Offered every semester. - NFS 405- Principles of Nutrition Education
Prerequisites: NFS 316 and NFS 401. Theories and methods of learning communication, and counseling as they apply to nutrition education and counseling settings; development, implementation, and assessment of instructional unit utilizing various forms of multimedia.
