About the Program
A microcredential in Community Nutrition and Food Literacy is the second of two stackable microcredentials designed to prepare learners to address food insecurity, chronic disease prevention, and sustainability through community-based nutrition education and engagement. This microcredential prepares learners to design, facilitate, and evaluate food-based education and outreach initiatives that promote healthier, more equitable food choices in diverse community settings.
Through hands-on learning in applied nutrition, health education, and a culminating community-based partnership experience, learners will develop skills in facilitating workshops, supporting behavior change, engaging diverse populations, and implementing inclusive, evidence-informed, and culturally responsive nutrition initiatives. Learners will apply these skills in collaboration with community partners and organizations working to improve food access, nutrition education, and community wellness.
This micro-credential provides interdisciplinary, workforce-relevant knowledge and skills applicable to careers such as dietetic technician, nutrition assistant, community health worker, wellness coordinator, hospitality professional, food service supervisor, case manager, behavioral health support staff, community outreach coordinator, and nonprofit or public health program staff. Learners must complete the Introduction to Food Literacy microcredential prior to enrolling in this microcredential. Non-Buffalo State learners should contact the department regarding prerequisite requirements and eligibility.
